This is my version of an americanized Nakiri (Vegitable Cleaver), its a little more stout than your traditional and is more focused on getting through harder root vegitabels but will also excel at finely cutting lettuce and cabbage. The blade is differentially heat treated and has a nice, started patina from acid etching. This will be a wonderful addition to anyone's kitchen.
