My hooded merganser is a chefs knife just shrunk down to make a handy tool in the kitchen. this blade excels as a herb/garlic knife and can do all of the jobs the big boys can do just in a more compact package. The blade is differentially heat treated and has a nice, started patina from acid etching. This will be a wonderful addition to anyone's kitchen.
