If you need to take apart a deer or a chicken my sprig boning knife will be what you will reach for first. A very thin keenly sharpened edge with a nice swept up belly and a fine yet sturdy tip to help you butcher game or trim large cuts with ease. The Grip-X(Griptec) scales are a resin with rubber in it making the handles tacky yet comfortable and doesnt loose its grip when the handle gets wet. The blade is differentially heat treated and has a nice, started patina from acid etching. This will be a wonderful addition to anyone's kitchen or butchery kit. 

My Sprig and Specklebelly boning knives are very similar and do the same job, just a slightly different handle shape.
