The Wigeon Chefs knife is my version of an Americanized Nikiri, instead of a straight cutting edge you have a ton of belly so you can rock and chop and slice your way through any prep tasks in the kitchen. The front of the knife can also be used to scoop the material you just chopped as well. The knife is deceptively light for its size with a nice taper to the blade. The taller blade makes sure your knuckles dont hit the board when you are cutting and the Grip-X handle makes sure you have a comfortable and grippy handle that gets tacky if your hand gets slightly wet. All around a fantastic knife for someone looking for performance. The blade is differentially heat treated and has a nice, started patina from acid etching. This will be a wonderful addition to anyone's kitchen.
