The Hooded Merganser not only is my favorite waterfowl but also this is probably my favorite knife in the kitchen. Big enough to do any task but small enough that you can use it all day and not get any fatigue. Dont let the small size fool you, this thing is a work horse and can do just about any job you throw at it. A very acute and accurate tip with some belly in the blade will let you dice everything from large onions and potatoes to garlic. The Grip-X handle is comfortable and grippy keeping your hand safe and adds a classy look to the knife. The blade is differentially heat treated and has a nice, started patina from acid etching. This will be a wonderful addition to anyone's kitchen.
